Ham
We have stopped buying pre-packed ham, and started just buying a ham joint, and cooking it, then slicing and freezing it for the month (saves us about £5 a month) and is much tastier.. The water you cook it in (i add leaks / water / onions and herbs to the roasting pan when i cook it), this makes a great stock or soup base too.
Bacon
when you get a pack of meat (bacon / sausages) if you split the pack into smaller portions, it goes so much further. I always cut the tails of the bacon, and chop them up small to make pancetta, then pack the bacon medallions into bags of 2 rashers. the panchetta then gets used in salads / risottos / pasta / sandwhichs... and the rashers get saved for breakfasts / wrapping around chicken breasts and for mixed grills. so from 1 pack of bacon you can make 2-3 meals rather then just 1.
Finally if you like courgettes find a local market and look for one selling veggy plants. I picked myself up a couple of courgette plants today, for £1.50 , each year i have grown courgettes, they need very little maintainence, and I always get around 30 courgettes per plant (bargain).
