Investing in slow cooker is a great way to come home to a homecooked meal waiting there for you. Always cook a bit extra to make it strech past 1 meal

Batch 1

Slow cooked rosemary lamb

brown a cheap cut of lamb in a little oil, add some chopped up left over veg (I recomend onion, garlic, carrots, potato, courgette) and fry for 2-3 mins. Transfer into the slow cooker, and pour in lamb stock and rosemary. leave to slow cook while your at work

Lamb and chickpea couscous

Any left overs from the lamb can be mixed into some dried couscous. cook a can of chickpeas in a little lamb stock, and then add to couscous. You can stir in some feta or halloumi if you have some spare.
